San Antonio Style Baked Chicken

You can prepare this in the morning and refrigerated and bake later.

Mix:
4 eggs, beaten
5 tbsp picante sauce

Set aside

Mix:
2 cups dry bread crumbs
2 Tbsp chili powder
1/12 tsp cumin
1/2 tsp garlic powder
1 tsp oregano

set aside

melt 1/3 cup butter or margarine in a foil lined baking dish. Bone and skin 6 chicken breast halves. Dipe each chicken breat in egg mixture, then in crumb mixture. Place in melted margarin and turn to coat both sides. Repeat until all are done. Bake uncovered for 25-30 minutes at 375.

serve with rice or spanish rice and condiments of sour cream, avocado wedges, tomatoes, and green onions (maybe omit that if it is a date [:X]).

For dessert:

KAHLUA ALEJANDRO

combine in a blender
1 oz. Kahlua
1 oz.Gin
2 Tbsp. vanilla ice cream
3 ice cubes

Blend well and pour into stemmed cocktail glasses.
