Dessert — Molten Chocolate cakes
4 oz very high quality bittersweet chocolate
1 stick unsalted butter
2 egg yolks
2 tsps flour (teaspoons!!!)
1/4 cup sugar
I sometimes add a drop of vanilla extract
Makes four small cakes
Melt chocolate and butter in double boiler. Let cool while beating eggs
Beat eggs and egg yolks in mixer with paddle until light and lemon colored. Beat in sugar until dissovled. Remove from mixer.
Blend in butter/chocolate mixture, then add flour. This can be used right away or refrigerated for a late-night chocolate jones…
Preheat oven to 450.
Butter and lightly flour small custard cups
Place 1/4 of batter into each cup, place cups on baking sheet. Place in oven and bake for 6-7 minutes.
Remove from oven, invert onto serving dishes and serve immediately with whipped cream.
Hints: DO NOT skimp on quality chocolate, and do not over-bake or the center will not be molten.
These are virtually guaranteed to close the deal.
