Oh! One more, from Cavallo’s in Waterbury. Not a grinder per se, but you can get it as a grinder, so I’m including it.
They call this “The Godmother”, and it definitely earns that lofty title.
Fried eggplant, prosciutto, fresh mozzarella, basil, roasted peppers, tomato, and olive oil.
Worth going a little out of your way for! I was on the fence as to whether the prosciutto was necessary, since the eggplant boasted its own wonderful robust flavor. In the end, I decided the two worked very well together.
