That looks delicious, Larry ! Thanks for posting. I am just getting into edamame beans and I think they’d be great in a curry. We don’t have that sauce here so I’d use either my own spices or a curry paste ( apart from less known brands, we have Patak’s pastes and sauces here as a supermarket staple which are really very good ) and coconut milk. If not in possesion of leftover chicken, I think more mushrooms, other veggies or tofu/Quorn would probably work well.

I’ll pass on the quinoa though… I like a lot of different grains but I have never taken to that despite repeated attempts. It’s a shame because if you’re eating meat free ( for a bit or permanently ) its a complete protein so very handy. But although I like the texture there’s a slightly odd odour about it that I don’t like.
