Try lavosh or square flatbreads for this. You can cut them into portions from end to end without much waste. Do not just make beef ones, use other meats and fillings so there is some variety.
Grill some boneless, skinless chicken breasts. Show the grill marks. Slice the cooked breasts lengthwise and place on a bamboo skewer. Baste with sauce and serve. The reason for pre-cooking is that it is sure easier to place cooked chicken on the skewers as opposed to having to cook the raw stuff and the bamboo burning. Everybody likes things on skewers. Fruit skewers are nice too.
Chicken wings are okay, you do not need to make them spicy. For instance, marinate them in a soy based mixture and bake in the oven.
enginecapt’s recipe is subject to variations. jb007 mentioned one for the sauce, but as I know this recipe, it is served with cocktail weinies.
All of the suggestions are great as you can prepare many of these things the day before, leaving you to just go out and smooze with old friends.
Seeing that you expect 50 people, I cannot actually recommend this as it takes some prep, along with deep frying. It is just that you guys are at the 30 year mark and I want to suggest wonton roll-ups. You make whatever mixture you want (use mushrooms?) to fill inside the sheet and roll it up in a manner that was done when you were a teen. Did you use Zig-Zags..?
One thing that you should consider is not to overprep, leaving you with too many leftovers. You will be surprised how lightly people can eat at these functions. I have a formula for most parties, in your case it goes like this:
50 people X 2 portions per person =100 – 10 portions for the folks who will not eat it. This equals 90. I will bet that if you make 90 portions of anything, you will do fine.
If I am wrong, you can always blame someone else for eating too much…
