C’mon, Cincinnati chili is one of America’s great regional dishes. The problem comes when newcomers make the same mistake we did as callow youths and expect it to be a twist on the kind of chili everyone in the country normally eats. Big mistake. Ignore the word chili and just think of it as a beautifully eccentric regional specialty.
