In the late sixties, my folks used take me out for dinner to an excellent Chinese restaurant in Columbia(MO)named Kai Mins. They had a dish called pressed duck, and it was just as you described. I remember that it was labor intensive, and a special press was needed to make it. I have found pressed duck served in only one other restuarant since then.
