If you’re searching for recipes, I guarantee you’ll find the best ones if you spell it correctly: chile verde. It refers to the color of the base that’s made using green chile peppers and tomatillos. It’s traditionally a pork dish. In New Mexico they call it green chile stew, although I’m not sure if they add tomatillos. The internet abounds with recipes for both, and you’ll find a few good ones on this site too.
