Al, I have encountered that too, and for that reason I do not eat Catfish ! I remember when I was a kid, I would go catfish fishing with my grandfather and uncles and we would catch small young catfish and then skin them and fry them whole. They were always firm and crunchy, but as an adult, I have never had catfish that tasted the way I remembered. So I just don’t eat it because I hate the mushy taste and feel !
Part of the issue may be that nowadays all catfish are farm raised, so they don’t taste the same as the ones caught in the wild.
