I used to watch my Grandma make these, I updated the methods.
3-4 large potatoes – russett
1/4 medium onion
2 lg eggs
1/3 cp flour
shred potatoes in processor, chop onion fine, place 1/2 of potatoes & onion in a mixing bowl, leave other 1/2 of potatoes in processor change to chopping blade, add eggs & flour, salt & pepper to taste, process to puree, mix with shredded potato & onion. spread spoonfuls in lightly greased frypan. cook until browned on one side then flip & brown second side. I like mine served with scrapple & ketchup.
