GENEVIEVE’S PEACH UPSIDE DOWN CAKE (my grandmother)
Sift together 1 1/2 cups + 2 tbsp. flour, 1 cup sugar, 2 tsp. baking powder, and 1 1/2 tsp. salt.
Add: 1/3 cup shortening, 1 tsp. vanilla, 2/3 cup milk.
Beat 2 minutes on medium speed. Add one large egg, and beat 2 more minutes.
Grease pan. Mix together 4 tbsp. of melted butter and 1/2 cup of brown sugar. Put in bottom of pan. Sprinkle a tbsp. of flour over that. Arrange sliced fresh peaches on top of that. Then add the batter.
Bake at 350� for 50 minutes. Remove and let cool for 3-5 minutes, then turn upside down onto a plate.
(A caveat: I have yet to make this cake where it doesn’t stick to the pan or crack in the middle as I am turning it out. I usually do a good job of piecing it back together for presentation purposes, but most of the time I just don’t care. It just tastes so good, I don’t care how it looks!!)
