I’ll tell you what! I recently had a roasted portabello mushroom with carmelized onions topped with melted scomoza cheese on a sub roll. Absolutely fantastic, and I wasn’t even hungry. It also had some tomatos and a lite dressing olive oil with balsamic vinegar maybe.
I’m suprised that eggplant wasn’t on the list though. Chow Jim
