The meat used for the 8/1’s is the same for the 4/1’s. The taste difference is due to the density of the encased meat. For exapmle: ham can taste different when it’s thinly shaved, compared to when it’s thickly cut. Most Chicago hot dog stands use 5/1’s for their "jumbos". My cost of a 4/1 is considerably higher than a 5/1. The 4/1’s girth prevents it’s from being loaded with condiments on a 6" bun. 4/1’s sitting in excessively hot water for extended periods of time, expand too much.
