Okay, when grill season starts up again here in N.E. I’ll be looking for this post. I love beef ribs but I usually kill them on the grill.

What cut of ribs are those? We don’t see anything like that around here. Maybe we could special order (and special pay) for them at a butcher shop. The back ribs at the supermarkets this year have had no meat to speak of. I usually buy short ribs. Looks to me as though you may have racks of the full ribs we buy cut up as short ribs?

I’m going to have to braise some short ribs, soon.
