The only way to go with beef (and chicken, too, for that matter) is K-O-S-H-E-R!!! My Grandpop was a Kosher butcher. We kids were never witness to an actual slaughter (DUH!), but I remember being fascinated by every other aspect of the butchering and marketing processes; and the animals that, although raised, slaughtered and in every other way prepared to be processed as Kosher beef, were ultimately refused when internal infections or other unappetizing forms of disease were discovered in the animal… yet shipped off and accepted as non-Kosher by other vendors.
So join your friends, the observant Jews and Halal Muslims, who only eat Kosher meat, if you’re a reluctant carnivore in light of Mad Cow Disease. Shalom! Salaam alechem!
