This is an odd one by most standards but everyone I’ve served it too has adored it.

Candied Bacon Bites

1 lb regular sliced bacon(peppered if availiable)
2 cups brown sugar
1 TBSP Mustard Powder
1 cup chopped nuts(I make a mix of peanuts, pecans, almonds and cashews)

Line a jelly roll pan with aluminum foil. Lay out bacon in strips. Mix the brown sugar, mustard and chopped nuts in a bowl then sprinkle over the bacon, coating well. Stick the pan in a 250 hour and let the bacon cook for about an hour to an hour 15, checking often to prevent burning. Take coated bacon strips out of the pan and put in a brown paper bag for 1.2 hour to let excess grease drain and the carmelization to harden up. Remove from bag and cut bacon into rectangular bite sized pieces. Serve warm or refrigerate until cold………Either way is wonderful.
