A couple of you have asked about making your own bacon. I have a recipe, which I have not tried yet but it came from one of my BBQ buddies, that uses a pork butt cut in half lengthwise, cured and then smoked. This would give a little leaner bacon than using the belly. Also, the smoking is done at a much lower temp than regular smoking. They say it is delicious. Now that I started this, I am going to have to make some soon.
