Sounds decadent. Is it the kind of thing you can get in a chain grocery, like King Soopers (Krogers) or Albertsons or Safeway? And it is called fatback?
What is fresh side? My mom used to fix that — seemed like fatty bacon or something similar. She would dip it in egg and flour and fry it and serve with mustard. Makes my mouth water to remember it. Is it similar to fatback?
"Fresh side" or "side pork" is uncured bacon—freash of the pig and unadulterated–good too!
