According to the bacon police, Dr. Atkins diet caused everything meat related to increase dramatically. Now that mad cow has made in impact, a lot of Atkins folks switched to pork and poultry.
When I go to a Super Walmart, I see such a variety of prices. Anywhere from $2.00 to $6.00 a pound. Is there that much of a difference in quality? I generally buy what is on sale and it turns out pretty good. At least I like it.

What does cause the price difference? I know that the cheaper bacon, which I buy if I am using the bacon for seasoning, has more fat, but how does it get "graded"?
Is it the processing/smoking that causes the wide variety in prices?
I think everyone should post their favorite "non-breakfast" bacon recipe. I will have to think on this one.
