Oh yes! And cold mornings and cold afternoons….
OK, I’ll give you the recipe, but you have to remember, I’m really BAD at guessing quantities since I just throw stuff together. People ask me all the time, "how long do you cook it??" Hell, I don’t know! Until it’s DONE!
Here’s what you do: get some good smokey bacon, maybe 1/2 pound. Chop it and brown in soup pot. Remove bacon. Take about 1 lb. boneless skinless chicken, diced and coat with seasoned flour. Brown in the bacon fat. To the chicken add one small onion, diced. Put in 5 med. red skinned potatoes, diced (I leave the skin on), add the bacon back in and just cover with chicken stock. Cook until potatoes are tender (they will also thicken the soup).
Peel, seed and core 5 tomatoes and chop. Add this to the soup along with about 2 C heavy cream. Throw in 2-3 handfulls of grated sharp cheddar cheese and some chopped green onions. Eat and enjoy. [:)]
