I believe the School of Agriculture at Cornell University in Ithaca, NY maintains an orchard of many many old and current varieties of apples- I’m sure they are on-line for info.

To most of us here in NY our idea of Washington state apples is an enormous Red Delicious that is very nearly tasteless, useless for cooking, and hard enough to be a WMD. glad to hear you raise other varieties that are tasteful and useful.
