Bill, I missed this the first time around when I was a relative forum newbie. I think this is an excellent forum topic.
I think there are a few food trends worth noting. Mexican food has expanded out of what was Mexamerica as the diaspora from Mexico has lead to huge Mexican enclaves in Chicago and small towns like Dodge City, Kansas, Portland is starting to develop Mexican eateries that specialize in fish and Oaxacan food as well as the northern Mexican dishes with which we are all familiar. People from different regions have made Tucson and Phoenix an excellent mix of tastes and other regional cuisines.
