The very best barbecue is the original:  minced whole hog (not pork shoulder!) seasoned with vinegar/pepper sauce (not that tepid, ketchupy “dip”).

 

Yes, “Western Carolina” has its fans, but Eastern Carolina RULES the barbecue world!

It’s an okay list in my opinion, maybe even quite good. Everyone of these so called BBQ best of lists, never mention Atlanta, and there is some mighty fine Q in the metro area.
