Hello all. Its been awhile since I’ve posted on here but I’ve read a lot and try to keep up to date with what is going on. Anyways, I had posted a few years ago that I had bought a concession trailer. I was all gun ho about getting it going and you guys gave me a lot of great advice. Then I took the head principal position at my high school so my concession dreams were threw off for while. I had also just entered my doctoral program so a lot has been going on. Well I finished my program and just recently went to the barn and seen my concession trailer setting there all dusty and run down. I have been working like crazy to get it in shape and plan on taking it to some festivals here in Kentucky this fall. When I was on here before some of you guys, including Dr. BBQ (I think was his name) gave me some great advice about serving onion straws instead of onion blossoms. That made so much sense as the prep time is much less, its cheaper and don’t require as much man power. That is going to be apart of my menu. Just wanted to mention that to show the great advice I get on this site.
Ok now I’m finished with my rambling lol. Heres the deal, my wife suggested that we sell pulled pork. I like the idea and believe that it will go well here in Eastern Ky. My question is, how economical is it to prep and prepare pulled pork during these events? There will be two of us working in a 10X7 concession trailer. Also does anyone have a good recipe or ideas on how to prep pulled pork easily, yet still tasty. I thank you all for your help and guidance.
