I’m about to order this cart (photos below), but I can make modifications beforehand. He said I can save money by removing the griddle and the raised topping holder, but I think I want them both. He said I could also have it in thinner steel, this one is done throughout in 304 steel. The fabricator said I could save money by reducing the number of pans (I don’t intend to reduce the heated ones) and if I wanted I could add more later.

He also said, when asked, that he could make a hole through the centre of the cart through which I could stabilise a very large canopy to cover myself and a small table and chairs. I don’t have the money for this yet, but if all goes well I’d love to do this before winter sets in.

Your comments and advice at this stage could make all the difference to how this pans out for me  pun intended!

I will, of course, get the nod of approval from my environmental health dept. on the cart before I order it, but from what I understand it exceeds all current requirements in the UK,

Please do post your thoughts – no matter what they are, so I can give them to the fabricator as considerations and feedback from real experts.

Unfortunately the pics are not as clear as on my PC.
In case you can’t see, it has 2 sinks with hot and cold water, 3 wet well bains maries, 11 pans  (non-heated)  and a griddle (seen to the right of the cart).
