On the dog cart, do you all chop your raw onions by hand?? or do you use a food processor?? If you use a food processor, does it make the onions too … mushy or weird?? If not a food processor and you don’t chop by hand, is there another tool to use that does the job quickly and make the onions small enough.

Also, for raw onions, is there a preference for yellow onions as opposed to red ones?? I usually grill big yellow onions, but wasn’t sure what to use best for the raw ones.

Starting up NEXT WEEK (!!!!) so I’m coming down to the wire and getting all the little details lined up (having my family/friend trial over the weekend). So bear with me if I have a few more tricks to the trade to learn from you [:)]
