I am a late convert to onion sauce on street dogs, having always followed my Old Man’s taste for mustard and kraut, so I don’t know if it started here in NYC. In any event, I have become a connoisseur of red onion sauces.
Many street vendors use commercial mixes: Sabrett makes some in foil bags and glass jars and Victoria also makes a version. However, the drity-water guys, I look for – usually in vans rather than pushcarts – are the ones who make the stuff themselves.
I want to make a do-it-yourself version, but have never gotten it right and, like one of my co-workers who took with the secret of her sauce to the grave, they will never give out the recipe. Does anyone have a recipe for a nice onion sauce?
I’ve tried different kinds of onions, tomato-based, paprika-based, with and without smoke-flavor, basil, oregano and I just can’t get it.
