So I am back in school after a year off. I am still the old fart. Taking Culinary III this semester and have a small class – just 5 of us total plus teacher.

So here is the deal – I have to chose a region by Wednesday to submit to the teacher. Then I have approximately 9 weeks to research the region, come up with a theme for a bistro, develop a menu with 2 entrees and 2 appetizers or starters, develop the recipes, price out the recipes and then prepare to do them for a buffet.

Of course I know Southern foods inside and out and could easily do that but it’s boring and probably what the other students will do (though I bet I can do it better). So here are the options I am thinking of – what do you think? What would you pick, why, etc…..

Option #1 – New England with a seafood theme
Option #2 – New England with a thrifty homestyle food
Option #3 – New England with a Boston North End Italian theme
Option #4 – Mid-West – love working with the heavy mid-west foods of German and other Eastern European influences

I just can’t decide and can’t decide which recipes to go with.
