Your microwave can be an awesome chicken cooking machine. Boneless chicken breasts cook exceptionally well in the microwave. A favorite of mine is what I call the Chicken Dippin’ Sandwich.
This is a no muss no fuss affair, simplicity itself and very quick comfort food. Here is the method:
Use a microwave container that the chicken breasts will fit into easily. I use the plastic supermarket
ones, quick easy and throwaway. Arrange the chicken in the container, cover. Microwave at 75%
power for 5 minutes. Turn chicken and repeat. Add a can or bottle of gravy and microwave at 50 %
power for 10 minutes. The result should be done and juicy, but do take a temperature reading for safety.
The roll should be a fine bakery hard roll or best you can get. Fill the roll with chicken breast, splashed with a bit of the gravy/juice mixture. Reserve cooking juices in a dipping bowl.
Eat dip and enjoy.
