Anyone ever used a LaCaja China Cuban roasting box? Killer roasted whole pig in about 6 hours (60-65lbs)? We have a home made one pictured, or you can buy a commericaly manufactured one from the link provided.
Marinate the pig overnight with mojo, splay pig open,wire it in. Place in the box upside down for 4 hours. Place charcoal on top of the boxes steel lid. Concentrate charcoal over the hind and fron quarters for threehours, then rake evenly. At 4 hours, remove lid, flip pig, keep coals going. At 6 hours pull and carve….YUMMY.
