I like mine plain & simple, potatoes and salt, but when I do it things go haywire sometimes.
Usually I peel the tater, sometimes leaving small parts of skin, and with a hand-held shredder I shred them with the wide blade for a rounder cut.
Using vegetable oil I simply fry them in a large pan, I like them more towards the browner side.
This is the same exact way my grandma made them but to this day I cannot do it like her, they tend to stick together where hers would easily peel from each other by the fork. What’s my problem?! Different method of cutting, different oil, different pan, high heat/low heat??
How does something so simple drive me so mad?!? [:p]
