I bought some arrowtooth flounder filets at my local seafood shop the other day. They were still mostly frozen so when I got them home I stuck them in the freezer for 2 days. I took them out and let them defrost for 2 hours then dipped them in egg and then ran them through a corn meal dip.

I baked them at 350 for 15 minutes. When I pulled them out the fish was mushy. Nasty mushy.

Any ideas whet went wrong?
