I’ve found a coney sauce reciepe that I really like and I’m thinking of using it in my restaurant but I have a question about it first. Do traditional coney sauces have a hint of smokey flavor and any heat? The reason I ask is the coney sauces I’ve had in the past haven’t and this reciepe does. I don’t want to use this sauce even though its really good if it isn’t a "true" coney sauce because I want to offer my customers what a coney sauce should be. So, should a coney sauce have any hint of smokiness or heat?
