I’m from Dallas, and the restaurant salsas I like are thin and runny, and really hot. Red, with visible pepper seeds. No heavy cilantro presence, no chunks of anything. I live in LA now, and this is not always easy to find. I’ve run through all the brands in jars, La Victoria, etc, and they are universally too mild, too thick, too chunky. The two I’ve found that I like best are in little cans from Mexico. Herdez Salsa Casera (about $1.50) is OK, but better is El Pato Salsa de Jalapeno (only $.59!). The Herdez is not as hot as the El Pato, and has more small chunks of tomato and onion. Plus you can’t beat the El Pato price. It’s available in most grocery stores here. In Dallas they put a dispenser of salsa on each table. One of those things they put syrup in at coffee shops. Never seen that in LA, usually tiny ramekins of wimpy stuff. Anyone out there love Ojeda’s?
