After watching this in use on several of the cooking shows I’ve decided to try it. So far I’ve smoked some halibut but I’m ready to try much more. I’d appreciate any hints, recipes etc. I am curious about warnings about the intensity of the mesquite sawdust——–is it that overpowering? Which sawdust seems to be the best type to stock up on?
