My trailer is equipped with two steam tables: the direct-heat hot dog steamer, and a separate large steam table for holding sauces and stuff.

My problem is that the only things I keep hot in the steam table are chili and cheese sauce. Meaning, I’m only using 1/4 of the steam table… but I have to heat the whole table to do it.

This year I’d really like to reduce my propane usage. Not having to heat that steam table would probably save a lot.

So I thought… I only use one side of the hot dog steamer. Is it feasible to keep the chili and cheese sauce in the other side? Will it keep things hot enough that way?

If I was a handler guy, I’d figure out how to split the steam table in half and install separate burners, but I’m not capable of that.

So… think it’ll work to do it all out of the steamer?
