Just got back from a tour of southern LA. and found a shop to add to the boudin tour. This was my first experience with boudin (I asked the server how to cook it and she gave me a funny look then said, “You don’t”) but I thoroughly enjoyed it, a nice, unctuous texture. The shop is Bourgeois Meat Market in Thibodaux, LA. I also got some andouille which I haven’t tried yet. They carry jerky which looked good but we left it for next visit.
