Those look great! There needs to be more Tex-Mex style food trucks around.

Interesting thought. I’ve only known of a couple of Tex-Mex food trucks but haven’t thought about why. Possibly because around here at least (Houston) the clientele tends to be older and probably not into street food. Or maybe because there’s a Tex-Mex restaurant about every other block so you might say the market is too crowded already!
