Funny you should say that. The original intention was to eat the guisada for dinner and save the enchiladas for a late night snack (Hah!) or breakfast or maybe lunch the next day if they lasted that long. But once I took the lid off to take a picture the aroma got to me, I tasted the beans and gravy and then I devoured the whole thing. Just 2 enchiladas but I was full.
If I had a Tex-Mex joint, enchiladas would be available 24/7.
