
Tartar Sauce
Tartar sauce is taken for granted whenever fried fish is served. Tom puts it bluntly: "Tartar sauce is tartar sauce. It's essential with catfish. It enhances the taste." But then he adds with a wink, "Or ... can also be used to hide it."
Ingredients
- ½ cup mayonnaise
- 3 tbsp sweet pickle juice
- 2 tbsp dill pickle relish
- Dash of lemon juice
- Dash of Tabasco
- Salt and pepper
Method
- Combine the mayonnaise, pickle juice, relish, lemon juice and Tabasco, and salt and pepper to taste in a small mixing bowl. Serve in a small condiment bowl or ramekin to accompany your favorite fish.
