- 2 tbsp diced yellow onion
- 2 tbsp diced green pepper
- ¼ lb ham, bacon, or sausage, chopped
- 3 eggs
- ¾ cup shredded Cheddar cheese
- Place two skillets over medium heat. In one skillet sauté the onion, pepper, and meat. Add the eggs to the other skillet, breaking the yolks.
- When the eggs start to harden, flip them over and add the onion, peppers, and meats on top of egg. Add the cheese, roll the omelet out onto a plate, and serve.
