Southern Omelet

A Tennessee twist on the traditional western omelet, here made with country ham or Loveless sausage or bacon.

  • Prep Time: 5 minutes minutes
  • Yield: 1 Serving
  • 2 tbsp diced yellow onion
  • 2 tbsp diced green pepper
  • ¼ lb ham, bacon, or sausage, chopped
  • 3 eggs
  • ¾ cup shredded Cheddar cheese
  • Place two skillets over medium heat. In one skillet sauté the onion, pepper, and meat. Add the eggs to the other skillet, breaking the yolks.
  • When the eggs start to harden, flip them over and add the onion, peppers, and meats on top of egg. Add the cheese, roll the omelet out onto a plate, and serve.
