Oklahoma City Cheese Grits

Years ago when Tupper Patnode was chef and proprietor of the Classen Grill (still an OK City Roadfood favorite), he shared with us his recipe for cheese grits. Ingredients
  • 2 eggs
  • 1/2 cup milk
  • 2 tbsp melted butter
  • 4 cups water
  • 1/2 tsp minced garlic
  • 1/2 tsp salt
  • 1 cup quick grits
  • 2 cups grated cheddar cheese
Method
  • Preheat oven to 400 degrees.
  • Whip together eggs, milk, and melted butter.
  • Bring water, garlic, and salt to a boil. Add the grits and stir constantly until very thick. Add the egg/milk mixture, stirring constantly, then stir in the cheese until it is melted and evenly mixed.
  • Lightly oil a baking pan about 9x12 inches. Pour the grits into the pan and bake 25-30 minutes, or 15 more minutes if you want to serve them as squares. Remove from the oven and let the grits cool 15-20 minutes before serving.
