Higgledy-piggledy mix of ground beef, scrambled eggs, and spinach

New Joe Special

The New Joe Special is an emblem of California cuisine before California Cuisine got ditsy. The most credible tale of how it came to be is that late one night at San Francisco's New Joe's Restaurant a hungry musician ordered a spinach omelet but asked the chef if he could add anything to make his eggs more substantial. The chef said he had hamburger meat left over from dinner hour. Now, all around the Bay Area, you will find menus that list Original Joes, New Joes, Baby Joes, and just plain Joes, all of which are a variation of the skillet meal that includes ground beef, spinach, and eggs. We like it at Original Joe's in San Jose (since 1956), where it is called the Joe's Special and the menu alerts customers, "We are not associated with any other 'Joe's' restaurants."

Ingredients
  • 2 tsp olive oil
  • 1 clove garlic, minced
  • 1/3 lb lean ground beef
  • 2/3 cup cooked spinach, drained
  • 2 eggs, beaten
Method
  • Heat oil over medium heat in a heavy skillet. Cook the garlic until it begins to soften, then stir in the beef and worry it as it cooks so it stays loose. When the beef is browned, push it to the side of the pan. Add the beaten eggs and spinach to the center of the pan. As the eggs begin to set, scramble them with the spinach, then stir in the beef.
  • When the eggs are fully cooked, move the scramble from the skillet to a warm plate. Add salt & pepper to taste.

When husband worked dwn the street for the phone co. He are there regularly. We’ve has several great meals, lived them all. I make the Orginal Joe special and we love it live in NC now
