
French Tarragon Dressing
Tarragon was always on the shady border of our garden," Tom recalls. "We used in our dressing and also in the baste for lemon-tarragon chicken."
Ingredients
- 1 tbsp vinegar
- 1 tbsp tarragon vinegar
- Juice of ½ lemon
- 1 tsp salt
- 1 tsp onion juice
- Capers
- 9 tbsp vegetable oil
Method
- Combine the vinegar, tarragon vinegar, lemon juice, salt, and onion juice and capers to taste in the work bowl of a food processor. Process until well blended. Add the oil in a fine stream, processing constantly at high speed until completely blended.
