Cranberry Salad

  • Yield: 8 Servings
  • 1 Orange
  • 2 cups cranberries
  • 1 ½ cups sugar
  • 1 (3-ounce) package lemon gelatin
  • Peel the orange, remove the seeds. Process the orange and the cranberries in a food processor until finely chopped. Add the sugar and mix well. Let stand for 1 hour.
  • Dissolve the gelatin in 2 cups warm water in a small bowl. Stir into the cranberry mixture. Pour into a nonstick mold. Chill, Covered, until set. Unmold onto a serving plate.
