Collard Greens Recipe

The secret weapon to cooking collard greens is duck fat. Children and adult might be repulsed at the idea of southern style greens. They can often change their minds if the greens are prepared this way. Collard Greens can be found year round, but are still best when picked out of the garden during the cold season.

  • Prep Time: 30 minutes minutes
  • Yield: 8 Servings
Ingredients
  • 12 cups Chicken Stock
  • 1 smoked ham hock
  • 1 cup rendered duck fat
  • 2 tbsp brown sugar
  • 1 bunch collard greens (about 4 lbs.) washed and torn into large pieces without the ribs and stalk
Method
  • Bring the stock, ham hock, duck fat and brown sugar to a boil for 20-30 minutes. Take off the heat and let stand for 1 hour.
  • Return to a boil and add the collard greens. Cook until tender, lowering the heat and simmering for 1 hour. Cover, remove from the heat and let stand for another 30 minutes
