Carmel Brunch

Like a crustless quiche, Carmel Brunch (named for the coastal community up north) is great for a crowd. It can be prepared the night before and baked in the morning.

Ingredients
  • 8 Eggs
  • 1/4 cup Flour
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 2 cups Cottage Cheese
  • 2 cups Monterey Jack Cheese
  • 1/2 cup Butter melted
  • 1/2 cup Canned Roasted chiles strained
Method
  • Preheat the oven to 350°F
  • Grease a cake pan with butter.
  • In a large bowl, beat the eggs thoroughly. In a separate bowl combine the flour, salt, and baking powder together. Sift the mixture over the eggs and beat until blended.
  • In a separate bowl combine the cottage cheese, Monterey Jack cheese, butter, and chiles. Add this to the egg mixture and stir to combine.
  • Pour the mixture into the baking pan and bake for 40 minutes or until puffy and set.
  • Serve this as you would a quiche.

Haven’t tried it. Looked for a “PRINT” option for this recipe but didn’t find it. Cutting/Pasting will work and I’ll try the recipe in a couple of weeks.
