Candied Walnuts

Walnuts store well and are available to cooks year-round. Like pecans, they are a cook's staple.

Ingredients
  • 1 cup walnuts
  • ½ cup confectioners' sugar plus more for blanching
  • 1 tsp cayenne plus more for blanching
  • 1 tbsp salt
  • peanut oil
Method
  • Blanch the walnuts by putting them in a heavy saucepan. Add some confectioners sugar and cayenne to taste. Cover with water, Bring to a boil and then simmer for 15 minutes. Drain in a colander.
  • Heat 1 inch of the peanut oil in a skillet to 350°F. Mix ½ cup confectioners' sugar, the 1 teaspoon cayenne, and the salt in a stainless steel mix-in bowl. Add the blanched walnuts and toss until evenly coated, Fry the nuts immediately in the oil for 8 to 10 minutes.
