Benedictine, a Louisville, Kentucky, signature dish, is cream cheese mixed with chopped green onions, mayonnaise and green food coloring. Usually lots of food coloring -- enough that the finished product sometimes looks like something the family Frankenstein might offer as an hors d'oeuvre. It is a hostess food, rarely found on restaurant menus but frequently used in dainty crustless sandwiches or, in a much heartier configuration, as co-star in a Benedictine and bacon or ham sandwich.   • Yield: 2 Servings
  • 1/2 cucumber, peeled, grated and drained of moisture
  • 1 bunch green onions, chopped fine
  • 8 oz softened cream cheese
  • 1 tbsp mayonnaise
  • 1-2 drops green food coloring
  • Mix cucumber, onion, cream cheese, and mayonnaise. Add food coloring, drop by drop, mixing each time to gauge the color.
