Ben Benson’s Special Salad

Ben Benson's in New York City is best known for its ne-plus-ultra prime steaks (and hash browns); but just about everything else on the menu is a cut above, too. This house salad is so hearty that it makes a nice vegetarian meal for two people … or a side course for four.

  • Prep Time: 20 minutes minutes
  • Yield: 2 Servings
Ingredients
  • 3 medium-size cucumbers: peeled, seeded, roughly chopped
  • 1 small yellow onion, thinly sliced
  • 1/4 cup white wine vinegar
  • 2 tbsp chopped fresh dill
  • 3 tbsp sugar
  • 1/4 cup salad oil
  • 12 medium spears asparagus: peeled, blanched, and cooled, sliced to 1/2-inch lengths
  • 2 cups diced green beans, blanched and cooled
  • 2 medium-size tomatoes, cut into 1/2-inch cubes (not skinned or seeded)
  • 1 small can hearts of palm, sliced 1/2-inch thick
  • 1/2 cup thinly chopped iceberg lettuce
  • Salt and freshly ground pepper to taste
  • 2 anchovy fillets, diced (optional)
Method
  • Combine all ingredients.
    Serves 2-4 people.

Try to get fat asparagus spears or you can’t peel them. Use at least a whole can of anchovies; I prefer two.
